Truffle Parmesan Popcorn

This upscale version of the classic movie snack is a real treat.

Ingredients:
  • 1/2 cup popcorn kernels 
  • 1/4 cup white truffle oil, divided 
  • 1/2 cup freshly grated Parmesan cheese 
  • Sea salt, to taste 
  • Freshly ground black pepper, to taste 
  • Optional: fresh parsley, chopped 
Directions:
  1. Using a large pot with a tight-fitting lid, heat 2 tablespoons of the truffle oil over medium-high heat. 
  2. Add the popcorn kernels and cover the pot. After the kernels begin to pop, gently shake the pot occasionally to ensure even heating. 
  3. Once the popping slows down (about 2 seconds between each pop), remove the pot from heat and let it sit for 1 minute to make sure all the popcorn has popped. 
  4. Pour the popcorn into a large bowl. Drizzle the remaining truffle oil over the popcorn, and then sprinkle the grated Parmesan on top. Toss well to combine. 
  5. Season with salt and pepper to taste. If you prefer, garnish with fresh parsley. Enjoy!
