Ingredients:
  • 8 lamb rib chops
  • 3 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary leaves, minced
  • Salt and black pepper to taste
  • Lemon wedges, for serving
Directions:
  1. Rinse the lamb chops and pat them dry with a paper towel.
  2. In a bowl, combine the olive oil, minced garlic, rosemary, salt, and black pepper. Stir until the mixture forms a paste.
  3. Rub the rosemary-garlic paste evenly over each lamb chop. Make sure all sides of the lamb chops are well-coated.
  4. Cover the lamb chops and let them marinate in the refrigerator for at least 2 hours, or overnight for a more profound flavor.
  5. Preheat your grill to medium-high heat.
  6. Grill the lamb chops for 3-4 minutes per side, or until they reach your desired level of doneness.
  7. Let the chops rest for a few minutes before serving to allow the juices to redistribute.
  8. Serve the lamb chops with a squeeze of fresh lemon juice for an added touch of summer brightness.
