New Brunch Recipe – Creamy Goat Cheese Tart

Ingredients
- 1 cup (4 oz) goat cheese, room temperature
- 1 cup (8 oz) crème fraîche, room temperature
- 1 egg, room temperature
- 1 garlic clove minced
- 2-3 Tbsp fresh herbs (dill, chives, parsley, tarragon) + more for garnish
- 2-3 tsp lemon zest
- Flour
- 1 sheet all-butter puff pastry, thawed
- 6-8 oz thin asparagus, ends trimmed
- Olive oil
- Salt
- Freshly ground pepper
- Chili flakes
- 1⁄2 cup Parmesan cheese + 2 Tbsp for garnish
Instructions
- Heat oven to 425 degrees.
- In a medium bowl using a wooden spoon or whisk, combine goat cheese, crème fraîche, egg, garlic, herbs, zest, and a pinch each of salt, pepper, chili flakes until smooth. Set aside.
- On a lightly floured surface, roll out puff pastry into a 13x11-inch rectangle about 1⁄4 inch thick. Transfer to a parchment lined sheet pan. Using a sharp knife, lightly score a 1⁄2-inch border around the edges of the pastry. Spread goat cheese mixture evenly inside the border. Arrange asparagus on top. Brush lightly with olive oil; sprinkle with salt, pepper, and 2-3 Tbsp of Parmesan cheese.
- Place in the top 1⁄3 of oven and bake until golden brown, about 20-30 minutes. Let tart cool on sheet pan for about 10-15 minutes or up to a few hours. Garnish with Parmesan and fresh herbs. Can be served hot or room temperature.
