Swordfish with Olive Salsa
Serves 4
Swordfish Ingredients
4, 6 oz swordfish steaks
Salt
Freshly ground pepper
Olive oil
Olive Salsa Ingredients
1 leek, halved and thinly sliced
Red pepper flakes
1 lemon, zested and juiced
½ cup Castelvetrano olives, chopped
⅓ cup chopped fresh cilantro
1 garlic clove, minced
¼ cup capers, chopped
2 Tbsp olive oil
Method
In a saucepan, heat olive oil over medium. Cook leeks with a pinch of salt and red pepper flakes until caramelized. Place in a bowl; set aside. Place all remaining ingredients in a bowl; stir together. Add leeks; toss to combine. Adjust seasoning to taste.
Heat grill on high. Oil grates. Drizzle fish with oil; sprinkle with salt and pepper. Grill fish 4–6 minutes per side, or until cooked to desired doneness.
Place fish on a platter and garnish with additional fresh herbs. Serve with olive salsa and rice or crusty bread.
