¾ lb sweet Italian sausage, casings removed
Olive oil
3 scallions, greens and whites, minced
2 garlic cloves, minced
2–3 Tbsp Marsala or Sherry
⅔ cup panko
Chili flakes
5 oz mascarpone
⅓ cup freshly grated parmesan
3 Tbsp fresh minced parsley
Salt
Freshly ground black pepper
Method
Preheat oven to 400°F.
Place mushroom caps on a parchment-lined baking sheet. Finely chop stems; place in a bowl.
Heat medium skillet over medium heat. Add a drizzle of olive oil. Break sausage into bite-size chunks for quicker, more even cooking. Sauté about 5–8 minutes. Let cool then finely crumble.
In same skillet, cook mushroom stems for about 3–5 minutes. Add scallions and garlic; cook for a few more minutes. Transfer to a bowl. Add Marsala or Sherry, panko, pinch of chili flakes, cheeses, parsley, and a pinch of salt and pepper. Combine well and let cool for a few minutes.
Generously fill each mushroom cap. Bake for 10–15 minutes, until filling is browned. Serve immediately.
