Meyer Lemon Madeleines
Makes 15
Ingredients
2 eggs
⅓ cup sugar
¼ tsp salt
½ tsp vanilla
¼ tsp lemon extract (optional)
½ cup all-purpose flour
3 tsp Meyer lemon zest ((There was no Meyer in this Meyer lemon recipe. Does it go here?))
4 Tbsp butter, melted and cooled
Method
Heat oven to 375°F. Brush madeleine pan with butter.
In a large bowl using an electric mixer, beat eggs, sugar, and salt until pale yellow and fluffy, about 5 minutes. Beat in vanilla and optional lemon extract. Gradually add flour. Gently incorporate; don’t overmix. With a spatula, gently fold in lemon zest and butter.
Place about 1 Tbsp of batter into each mold on pan. Bake until tops spring back when touched, about 5–8 minutes. Remove from oven. Invert pan over a cooling rack. Let madeleines cool completely.
Dust madeleines with powdered sugar, if desired, and serve with fresh strawberries.
