Grilled Pork Chops with Summer Berry Sauce

Ingredients
Pork Chops
- 1 tsp olive oil
- 4 bone-in pork chops
- Salt and freshly ground pepper
Pat chops dry with a paper towel. Place on a sheet pan. Lightly oil; sprinkle both sides with salt and pepper. Heat grill to medium-high; brush with oil. Sear chops well on both sides. Move chops to cooler part of grill; continue cooking over indirect heat until internal temperature reaches 145°F. Remove from grill; rest 5–8 minutes.
Berry Sauce
- ¼ tsp olive oil
- 2 cloves garlic, minced
- 1 shallot, minced
- ¼ cup red wine
- 1 Tbsp fresh thyme leaves
- 2 pints fresh blackberries
- 2 tsp balsamic vinegar
- Salt and freshly ground pepper to taste
Over medium, heat a small saucepan. Add oil; sauté garlic and shallot. Deglaze pan with wine. Add thyme and berries. Simmer for 6-8 minutes or until berries are broken down. Continue cooking until desired thickness. Stir in balsamic vinegar; salt and pepper to taste. Serve immediately. Tip: If it’s too hot to be in the kitchen, you can cook this sauce on the grill. Just use the cooler end to simmer.
