Beetroot Risotto with Goat Cheese and Walnuts

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup Arborio rice
  • 1/2 cup red wine
  • 3 cups vegetable broth, warmed
  • 2 medium beetroots, cooked, peeled, and grated
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup grated Parmesan cheese (optional for extra creaminess)
  • 4 ounces goat cheese, crumbled
  • 1/4 cup walnuts, toasted and roughly chopped
  • Fresh thyme leaves, for garnish

Directions

  1. Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until soft and translucent. Stir in the Arborio rice, toasting it lightly for about 2 minutes. Pour in the wine, stirring continuously, until the liquid is absorbed.
  2. Begin adding the warm vegetable broth, one ladle at a time, stirring continuously. Allow each addition to be absorbed before adding the next. This process should take about 18-20 minutes, or until the rice is creamy and al dente.
  3. Stir in the grated beetroot during the last few minutes of cooking, mixing well until the risotto turns a vibrant red. Season with salt and pepper to taste. If using, stir in the grated Parmesan cheese for extra creaminess.
  4. Divide the risotto among plates. Top with crumbled goat cheese, toasted walnuts, and a sprinkle of fresh thyme leaves for garnish.
