A Mouthwatering Pairing

 

Celebrate the end of winter cabernet season with a mouthwatering pairing. Our 2019 Georges de Latour presents a nuanced, exuberant nose that shows dark berry fruit aromas of black raspberry and black cherry. Aged in French oak, lending a range of notes to the glass that includes caramel, cedar, and clove, all of which blend well with the juicy beef tenderloin and the intricate flavors of the bleu cheese. This elegant, tried-and-true recipe pairing is great to prepare for brunch, bring to a dinner party, or serve at home for any occasion.

Ingredients:
  • Beef tenderloin, trimmed and tied
  • Kosher salt
  • Coarsely ground black pepper
  • Canola or other high-temperature oil
  • Mini potato buns
  • Milder, creamy blue cheese (like Cambozola)
  • Blackcurrant jam
  • Crispy fried onions
Directions:
  1. Liberally season beef with salt and pepper.
  2. Let sit at room temperature for an hour.
  3. Heat oven to 300°F. Place on rack in shallow roasting pan.
  4. Roast until thermometer reads 125°F (slightly less than medium-rare).
  5. On high, heat oil in a cast-iron skillet until just smoking. Sear roast on all sides.
  6. Place on cutting board to rest. Cut 1" slices.
  7. Stack on bun with cheese, jam, and crispy onions.
